Choc Chip Cookies

This is my favourite biscuit recipe and is so quick that it can keep the concentration of a 3 year old. My little cousin loves the recipe so much that when ever he comes to our house he asks to "baker baker" with "Amba". The little guy snacks the whole way through and just loves to "taste" when I lift up the spindle on the mixer.


I doubled this recipe so that each family member had about 10 biscuits to take home even after snacking on a whole lot each.


Makes 25 (50 if you double the recipe) biscuits.


TIP: A glass of milk makes the biscuits taste 100 times better!

 

Choc Chip Cookies


Ingredients

  • 150g salted butter, soft

  • 80g muscovado sugar or brown sugar

  • 80g castor sugar

  • 1 large egg

  • 2 tsp vanilla essence

  • 225g flour

  • 1/2 tsp bicarbonate of soda

  • 1/4 tsp of salt

  • 2 slabs of chocolate

Method

  1. Preheat the oven to 190°

  2. Cream the butter and sugars in the mixer until light in colour.

  3. Add in egg and vanilla essence and beat.

  4. Mix in flour, bicarb and salt

  5. Chop up the chocolate into 1cm cubes. Allow for small hands to steal a few.

  6. Mix in.

  7. Grease the baking tray and scoop balls of mixture onto the tray. Squish down with your fingers.

  8. Bake for 9-10min.

  9. Allow to cool and enjoy with a glass of milk.
