How to deal with stale bread

My family is terrible when it comes to finishing a nice bread such as baguette or sourdough (you know fancy bread), the end bit always goes to waste.

TIP: Leave the bread to go hard and then put it in the food processor. Blend it up until it's becomes crumbs and then freeze it. Use the bread crumbs when crumbing instead of buying or using fresh bread.


Here's away to revive your stale bread that is an-easy-to-prepare snack for an afternoon snack or a starter for a great meal.


FUN FACT: The margherita pizza was made in 1889 by an Italian pizza maker named Raffaele Esposito for the visiting Queen, Margherita of Savoy. The 3 toppings - tomato, mozzarella and basil were chosen to represent the 3 colours of the Italian flag .

 

Baguette, tomato relish, mozzarella and sweet basil


Ingredients


  • Stale baguette or any artisan bread

  • mozzarella

  • sweet basil leaves

  • tomato relish - any you may find, even tomato paste with some dried herbs will do the trick, consider adding chili if you like some heat.

  • butter

  • olive oil

  • balsamic reduction

Method


  1. Preheat the oven to 130°.

  2. Slice up the bread into 2cm thick pieces. Butter each one on one side and lay on a baking tray, butter side up.

  3. Splash some olive oil over to pieces of bread and place in the oven for 5min until slightly crispy.

  4. Smear tomato relish on each piece of bread

  5. Lay a piece of mozzarella and a sweet basil leaf

  6. Drizzle a balsamic reduction over each piece.

  7. Serve and enjoy!
