I make this recipe normally for my vegan friends but also can work for friends of eat gluten free by simply swapping out the flour with almond flour or rice flour, any gluten free flour.
Gnocchi, traditionally, is a potato based 'pasta' that normally is served as a starter and in small portions. It is quite a heavy meal and I prefer to serve gnocchi with a lemon and herb sauce.
This recipe can be frozen and used at a later stage. Just defrost the dough and kneed it until it is the correct consistency - not sticking.
Sweet Potato Gnocchi
makes for 8 people
Ingredients
Gnocchi
2 sweet potatoes - I used Kara orange sweet potatoes to give the bright orange colour
3 cups + of flour
pinch of salt
Lemon and herb sauce
handful of fresh herbs - I used coriander, parsley, thyme and origanum, finely chop
olive oil
half a lemon
salt
pepper
1 finely chopped brown onion
1 tbsp crushed garlic
Method
Peel the potatoes, chop and boil until cooked. You can bake the potatoes until cooked, but boiling is faster.
Rinse and leave to cool until you can handle it with your hands.
Pinch of salt and add the flour
Work the potato and flour until it isn't sticking to your hand anymore. Add more flour if needed.
Place flour on a counter and kneed until a dough.
Cut a piece of the dough off and roll into a long thing rope-like piece
Cut small pieces off the rope, about 1.5 - 2 cm long.
If you have a Gnocchi board - use it now. If not, like me, you can use a fork. Roll out the gnocchi pieces out with fork in your hand to make lines on the gnocchi.
In a deep pot, boil salted water and add the gnocchi pieces - be careful that they don't stick together.
Remove the gnocchi from the boiling water once they have risen to the surface of the water. Place to one side. Cook as many pieces as you need.
Drain the water from the pot. Keep the excess water.
Sauce
In the same pot, add olive oil , onion and garlic. Fry until cooked.
Salt and pepper and add finely chopped herbs
Mix constantly. Add lemon juice.
Add boiled water to make more sauce and level out the acidity.
Throw in gnocchi and fry up.
Serve warm or cold.
