Creamy bacon and spring onion sauce

This sauce will pair nicely with any pasta. I paired it with the gnocchi that I made then froze.


 

Creamy bacon sauce


Ingredients

  • 250g bacon bits

  • olive oil

  • 1 onion

  • 2 chicken stock cubes

  • 250ml of cream

  • 1 tbsp garlic

  • 4 sprigs of thyme, finely chopped

  • 1 cup white wine

  • 1 teaspoon corn starch

  • 1/2 cup water

  • 1/2 cup grated hard cheese

  • 4 spring onions. chopped

  • pepper

Method

  1. In a pan, add a dash of olive oil and fry up the bacon

  2. Then add the finely chopped onion and garlic. Fry until onion is translucent.

  3. Add the wine and thyme and stir.

  4. Break up 1 stock cube and mix in.

  5. Add the cream slowly while on a low heat.

  6. Add the second stock cube in bits until you get the taste you would like. I added the whole thing but half was enough.

  7. Mix in cheese

  8. If the sauce isn't thick enough add the corn starch to the water, mix and then toss into the sauce and stir.

  9. Add pepper.

  10. Mix in cooked pasta (Sweet Potato Gnocchi) and place on low heat for 3 min.

  11. Optional: place pan with lid into the oven on 100° until ready to eat.

  12. When you're about to serve the dish add fresh spring onions on top.
