My Cheese Sauce

This recipe I started developing from when I was a young age. It was one of the first things that I could make. I started making it because I thought that 2min noodles could be a whole lot better, so why not add a cheese sauce with it? My little brother loved it when mom and dad went out for the night and I made 2 min noodles and cheese sauce for the two of us. Even to this day he still asks for it.


This cheese can be paired and changed to suit anything. Such as making it more cheesy for mac 'n cheese or using a stronger cheese for making a cauliflower cheese bake. I have used this sauce with macaroni, 2 min noodles, chicken schnitzels, my version of a philly cheese steak and cauliflower or broccoli bakes.

TIP: Change out the type of cheese to get the flavour you are desiring. For example; use an aged white cheddar to get flavours of maturity and sophistication from the cheese but use a normal cheddar for 2 min noodles as it's full of rich flavours.


This recipe makes about 1 1/2 - 2 cups of cheese sauce depending on the thickness or thinness of the sauce that you would like, add more or deduct from the amount of milk. When making the sauce remember to have equal parts butter to flour and pour in splashes of milk until you reach the consistency that you would like.

 

My Cheese Sauce


Ingredients

  • 3 heaped tbsp butter or margarine

  • 3 heaped tbsp all purpose flour

  • 1 - 2 cups of milk

  • handful+ of cheese

  • 1 teaspoon chicken spice

  • pinch of salt

Method


  1. In a small pot - melt all the butter.

  2. Once the butter is melted, add each tablespoon of flour one by one and whisk. Keep adding spoons of flour until a wet dough is almost formed.

  3. Add splashes of the milk in and whisk until there is no lumps and then add more milk, whisk again until all the milk is added. If you add all the milk at the same time lumps could form and it's a lot of hard work to get them out. So little bit by little bit.

  4. Add all the cheese and mix until the cheese has melted.

  5. Mix in the salt and chicken spice to taste.
