Chicken Rolled in Bacon Stuffed with Homemade Ricotta and Spinach
Ingredients
feeds 5 people (add fillets to feed more)
Chicken breast fillets
1 1/2 packs of streaky bacon
Salt
Pepper
Butter
Spinach - 3 or 4 handfuls
Method
Preheat the oven to 180°.
Lay out the chicken breast on a cutting board and place a piece of cling wrap over all the pieces of chicken. Flatten the fillets by bashing them with a meat mallet. If you don't have a meat mallet use a wine bottle or a rolling pin.
Season the fillets with salt and pepper on both side.
In a pan; melt a teaspoon of butter and add the pieces of spinach. Stir until spinach is cooked. Leave the spinach to cool and then add to the ricotta mixture.
Weave the bacon streaks to make a blanket and place it over the chicken. Make sure to tuck the sides under.
Cook in the oven for 30-35 min. Until the bacon is slightly crispy and the chicken is cooked but still moist.

Ingredients
1/4 red onion
1 tsp crushed garlic
1 chicken stock cube
1 cup Rose or White Wine
olive oil
Method
In a pan; heat up the olive oil and add the finely chopped red onion and garlic
Add the chicken stock cube to the onion once it has browned slightly.
Add the wine and allow it to cook off on a low heat for 5 min
and remember to love yourself first,
