Fresh Radish Three Ways

Fresh Radish from my garden! All recipes are vegan friendly.

 

Radish Three Ways


Ingredients

  • fresh radish (9)

  • vinegar

  • salt

  • pepper

  • sugar

  • fresh parsley

  • olive oil

  • potatoes (5)

Method

Roasted Radish

  1. Slice 5 radish in to wedges.

  2. Place in a bowl and season with salt and pepper.

  3. Chop fresh parsley up finely , throw into bowl.

  4. Peel and cut up potatoes in to wedges a similar size to the radishes.

  5. Drizzle olive oil over the radish and potatoes. Toss the bowl.

  6. Place in the oven with the chicken for 30-35min at 180°.


Pickled Radish

  1. Slice 2 radish into thin slices and place into a small bowl.

  2. Create a solution; half water, half spirit vinegar and 2 teaspoons of white sugar.

  3. Cover the radish with the solution and let it sit until dinner is served. Try leave the radish to soak for at least 1 hour.



Sweated Radish

  1. Slice 2 radish into thin slices and layout on a plate

  2. Lightly salt the slices and leave out until dinner is served. Doing this will allow different flavours to come out of the radish.
